Espace Old Mill in Stanbridge East redefines farm-to-table dining by putting agriculture at its core. Spearheaded by Jean-Martin Fortier, an expert in sustainable farming, this unique project transforms a historic 1849 Loyalist-style building into a restaurant, boutique, and greenhouse. Chef Éric Gendron’s seasonal menus highlight the region’s bounty, incorporating ingredients grown on-site and sourced from nearby producers. The result is a dining experience rooted in the terroir, from vibrant vegetable-forward dishes to regional wines, ciders, and beers.

The space itself blends rustic charm with thoughtful design, featuring reclaimed materials and local craftsmanship. Guests can dine in the intimate, light-filled dining room or enjoy the terrace overlooking the Rivière aux Brochets. By integrating education, hospitality, and sustainable practices, Espace Old Mill invites visitors to experience the Eastern Townships’ agricultural richness while rethinking their relationship with food and community.
