Located in Quebec City’s Saint-Jean-Baptiste neighbourhood, Le Clan reimagines regional dining by celebrating the province’s diverse terroir. Chef-owner Stéphane Modat creates menus that connect diners to the land, with every dish tracing its origins to specific locations, from venison in Pierreville to rabbit from Rivière-à-Pierre.
Drawing from his travels across Quebec—from James Bay’s boreal forests to Nunavik’s icy coasts—Modat incorporates traditional techniques, such as smoking arctic char and harvesting mussels under frozen tides. Each plate reflects these experiences, showcasing the province’s landscapes and the work of its producers.
