Helmed by Alexandra Roy and Charles Provencher Proulx, with guidance from Guillaume St-Pierre (of Battuto fame), this small French-inspired restaurant emphasizes meticulous craftsmanship and a menu that balances creativity with seasonality.

Melba’s offerings showcase elegant simplicity. Starters like black pudding-stuffed barbajuans with apple chutney or scallops with poireaux vinaigrette hint at the thoughtful balance of flavours to come. Mains such as roasted cod with beurre noisette and veal cheeks with garlic potato rattes reflect the kitchen’s knack for elevating classic techniques. For dessert, highlights include vacherin with wine-poached pears and profiteroles with dark chocolate sauce.

The space, designed by Appareil Architecture, pairs warmth with understated sophistication, while attentive service ensures the dining experience feels effortlessly polished.
